Banana Peanut Butter Oatmeal cookies


Just what my doggies ordered. They love these cookies. It’s healthy and nutritious.

Banana, Peanut Butter Oatmeal cookies

INGREDIENTS

2 cups Oatmeal (soaked)

1/2” inch Water cover above oats

1 cup Banana

1/2 cup Peanut butter

2 cups All Purpose Flour

1 Tablespoon Olive oil

DIRECTIONS

Place 2 cups oatmeal in container and cover 1/2 inch water over the top. Leave that set until almost all the water has been absorbed. About 1.5 hour

2 cups Oatmeal
1/2” inch water to cover oatmeal
1/2 “ inch water over oatmeal soaking 1 to 1.5 hours

Heat oven to 350’ degree F. Grease 1” x 15”x 21” cookie sheet with the olive oil

Frozen bananas to peel
Peel banana’s
Golden banana’s from my trees

Place the banana, peanut butter and oatmeal.

Stir / Cream the ingredients together. Make sure all the bananas are mixed in good. You might want to mix the bananas prior to adding to the mix.

After getting those ingredients mixed time to add the flour.

Place the dough onto the cookie sheet and smooth out to thin layer.

Place in oven on center rack for 30 minutes. take out of oven. The sides should be pulled away from pan. Get the pizza cutter and cut your squares. Turn oven off and put the pan back into the oven and let bake until cool. You can make the size of the cookie fit your dog. I have 4 dogs in various sizes. From 85 to 15 pounds. So my cookies are various sizes.

After 30 minutes remove from the oven

Cut your squares and put them back into the oven until completely cool.

Remove from oven after completely cool. Put into an airtight container and refrigerator. I have 4 dogs and this last 3 weeks. You can also freeze them and just take out what you need.

Your dogs will love them until the last cookie…

You can adjust this recipe to your dogs taste or yours. I ate one and i couldn’t taste the peanut butter. I did a second recipe with 1 1/2 cups of peanut butter. I can taste the peanut butter and my dogs could really smell their treats baking and waited by the kitchen door.

Hatching Chicken Eggs From Scratch…


Are you wanting better eggs for your family?

Right on the kitchen counter till they start to hatch….

It usually takes 21 days for a chicken egg to fully incubate.
A day is the full 24 hours after you put the egg in the incubator
I tend to see external pipping (when the chick starts to break the egg) on day 19, but it can take up to 28 days in some cases.


It’s important to heat up the incubator for 24 hours before you put eggs in to ensure the temperature is correct and stays steady.


Choosing eggs to incubate. Make sure they are fresh and fertile. You have to have a rooster to fertilize the eggs. If you don’t have a rooster you might be able to finds some through your local newspaper or Farm Supply center.

Maintain a temperature between 100°-102° with a still air incubator and 99-99.5 with a forced air incubator.
Keep your humidity between 40-50% days 1-18, then increase to 50%-60% on days 18-21.
Turn your eggs at least 3 times a day from days 1-18, then don’t turn them at all on days 18-21.

Apricot Jam

INGREDIENTS

  • 2 cups Apricots (Dried)
  • 2 cups Water
  • 1/2 cup Sugar

DIRECTIONS

  • Place the apricots and water in a small sauce pan
  • Bring to boil
  • Reduce heat to medium, cook for 30 minutes
  • Add sugar and cook for 20 more minutes on low.
  • Remove from heat let cool for 10 minutes
  • Put mixture in blender or food processor. Blend until smooth.
  • Place in containers and refrigerate.
  • Will last for 7 to 10 days in refrigerator. You can freeze smaller portions and remove as needed.

Usually you replace your dentures every 3 to 5 years. If you don’t donate them at your dentist office they are probably laying around collecting dust at your house. Put them to good use.

The Japan Denture Recycling Association, is a nonprofit organization since December 2006. JDRA recycles the metal from used dentures and donates the money to UNICEF to support underprivileged children in the world.

All you have to do is sanitize the dentures. You can do so by boiling some water and placing the dentures in a glass bowl and pour water over the dentures. Let the dentures soak until water is cool. Remove dentures, dry off, wrap in plastic wrap and place in envelope or small box and mail them off.

LEFTOVERS: Turkey and Cheese Quesadilla

Simple Easy wholesome meal or snack for the kiddos.

  • 2 Tortillas
  • Butter
  • Cheese
  • Left Over Turkey shredded into small pieces
  • Sour Cream
  • Salsa or Pico De Gallo
Turkey and Cheese Quesadilla
  • Butter one side of the tortilla and place it buttered side down in the skillet
  • Place the cheese on then the shredded turkey
  • Butter the other tortilla and place it buttered side up
  • Place skillet on medium heat and cook until golden brown. Flip over and cook once again till golden brown.

Mix some sour cream and salsa or pico de gallo together for a great dipping sauce

KEEPING SAFE THIS WINTER


Remain vigilant about safety in and around the home this winter. Here are three winter hazards to keep in mind.

First, Carbon Monoxide – The Invisible Killer

  • Use portable generators outside your home and place them at least 20 feet away from the residence with exhaust pointed away from spaces where it can gather and present a hazard. Never use a generator inside a home, basement, shed or garage. The exhaust from portable generators contains poisonous carbon monoxide (CO), which can kill in minutes. 
  • Most portable generator-related deaths from CO poisoning occur during the cold months. 
  • Never leave a car running in a garage, even with the garage door open.
  • Install CO alarms in your home on every level and outside all sleeping areas. Test CO alarms monthly.

Second, Space Heaters – Give Them Space

  • Your space heater needs space. Keep flammable objects, such as curtains, sofas, beds, clothes and papers at least 3 feet away from your space heater at all times.
  • Make sure your space heater is placed on a stable, level, flat surface in an area where it can’t be knocked over.
  • Turn off space heaters when you are sleeping, or when you leave the room. 
  • Install smoke alarms on every floor of your home, outside all sleeping areas, and inside each bedroom. Test smoke alarms once a month to make sure they are working.

Third, Snow Blower Hazards – Clear Snow Safely 

  • Most snow blower injuries happen when consumers try to clear snow from the discharge chute with their hands.
  • NEVER leave a gas-powered snow blower running in an enclosed area. The exhaust contains poisonous carbon monoxide, which can kill in minutes.
  • Don’t add gasoline to a running or hot engine, to avoid a fire; and always keep the gasoline in a portable gasoline container with a child-resistant closure to prevent child poisonings.

One more very important thing… Clear the snow away from your gas meter and away from any pipes around that area.

Always wash your hands and change clothes as soon as you get home.

Try and keep the contamination to one area.

If you are one of the few that come home to one of the burnt out neighborhoods make sure you exercise caution while out in the elements.

That means anytime you are outside make sure you follow these simple emergency instructions to cleansing your body.

  • You do not want to inhale any of the elements that is on fire or has been burnt out.
  • Respiratory infections and many other illness can be blamed on large burn out fires as these.
  • Think about how many toxic products that are in our homes. Make sure if moving one of these items you are prepared with emergency protection gear.
  • Refrigerator, microwaves, cars, carpet, wood flooring that has been treated and those are just a few things that every home may have.

Your home and residing in the neighborhood: Set up an area that you can seal off. If you have a separate hall way that you can close off with plastic or a separate entry, perhaps through the side garage door(not a big one)with door to house. Handy to change contaminated clothes.

Even though your area may not have flames crawling up your street or that you can actually see, remember embers and ash can float through the air. It will glide until it gets caught on a branch or something to cling onto.

Make sure you bath each night before you go to bed.

Open your pores with warm water and use a good scrubby or washcloth with loads of soap. Soap up really good. Use cold water after to wash the soap off and close your pores.

Keep all of your smoke clothes in a plastic bag in your sealed area until you wash them. You don’t want to spread the smell or contaminate any other area.

If you are in close vicinity of the devastated areas: Do Not run any fans or air conditioning that has a connetion to outdoors. Close all doors, windows and vents. Close blinds and curtains to keep sun out and temperatures down in the house.

Caring For The Senior Family Member


You would think that in 2017 we would have figured out a way to ensure our senior citizens safe long-term care.

Many of us find that as our parents age, they’re more likely to need assistance to carry out everyday activities. If that is your role in your parents life, you will have to be diligent and make sure their needs are being met.

I know the first thought is to move them in with you. But you must really think carefully about this choice.

How do we keep them safe and living in their own homes. Or when and how do you trust a facility to give care to your family member?

  • Just remember low cost care homes usually have several patients and very few staff. Possibly there may be the 1 or 2 staff members on duty for each shift .
  • The caretaker for your family member must stay alert to their health and needs.
  • Checking with them daily. Either by being present or by phone.
  • Check physically at least once a week. Just remember it’s the ones left alone that will be at a disadvantage or taken advantage of. Without frequent communication and things go awry, you will not be aware it happened. You will never know something happened until the one you are caring for speaks up and tells you so.

I know our lives have become very busy between work and children. But they need you now more than ever.

Things to check on when you visit:

  • Loosing Weight
  • Gaining Weight
  • Proper Bowel Movements
  • Keeping Hydrated, especially during the hot months
  • Food supply
  • They have personal needs items. Toothpaste, deodorant and such
  • Making sure Bills are paid. Electric, gas, phone and rent or mortgage.
  • That they are able to lock doors and windows by themselves

Snowman Oreo-Truffles

Cookie Truffles

You only need three ingredients to make these white chocolate treats. They’re great for parties or to give as gifts.

Ingredients

1 11.9 ounce package chocolate sandwich cookies with white filling (30 cookies), finely crushed
1 8 ounce package cream cheese, softened
1 pound white baking chocolate, coarsely chopped

Directions

Line a large baking sheet with parchment, waxed paper or foil; set aside.
In a large bowl combine crushed cookies and cream cheese. Beat with an electric mixer on low speed until well mixed.
Shape mixture into 1-inch balls. Chill or freeze until firm.
In a large saucepan cook and stir white chocolate over low heat until melted; cool slightly.
Dip each ball into melted white chocolate; let excess drip back into pan. Place dipped truffles on the prepared baking sheet.
Chill truffles about 1 hour or until firm.
Store, covered, in the refrigerator up to 1 week or freeze up to 1 month..

Pumpkin Rolls for Thanksgiving and Christmas… Yummy

Chef Sherrie Angel “Slam Dunks” Thanksgiving this year with her Pumpkin Dinner Rolls. Creamy smooth texture that melts in your mouth. Bite after bite you can taste every spice layered across your pallet correctly.

Let’s not forget about the star of the day. Juicy seasoned to perfection turkey with chicken sausage gravy & all the sides to complete the meal.

I made my dough in the bread maker, but i have added instructions for making it by hand.

Risen twice and then baked to perfection. But we will give the directions for old school mixing in a bowl.

Chef Sherrie Angel… Rocks the Kitchen with Pumpkin Rolls

INGREDIENTS

  • 1/2 cup warm Whole Milk
  • 1/4 cup Honey
  • 1/4 cup salted Butter
  • 2 1/4 teaspoons Active Dry Yeast
  • 1 can (15 oz) Canned Pumpkin
  • 1 Egg
  • 1 1/2 teaspoon salt
  • 5 cups Flour

DIRECTIONS

Place milk , 1 teaspoon honey and whisk together. Sprinkle yeast on top, set to the side for 5 minutes.

In a large bowl combine and mix together the remaining ingredients. Add the milk mixture and start mixing. Dough will be wet. If the dough is extremely wet you can add some flour, but the dough should remain sticky. Don’t add to much flour at once, a little at a time until you can handle to dough.

After you have the dough mixed together remove from the bowl to a floured surface so you can knead the dough. Knead for 15 minutes.

Lightly butter a bowl and place the dough inside and cover with Saran Wrap. Allow the dough to rise. It should be doubled in size. About 1 1/2 to 2 hours.

Remove dough from bowl. You can use a pastry mat / board, greased surface or parchment paper to use for your work area.

Divide the dough into 4 pieces so it’s easier to handle. Cut the dough into 24 pieces. Grease or butter your hands and roll the dough inward into balls. Place the pieces into a greased pan or pans. Depending on what you have handy.

Cover pans with a kitchen towel and allow the rolls to rise to double or triple the size. About 1 1/2 to 2 hours.

About 30 minutes before the rolls are finished rising turn the oven on to 375 degrees F.

Bake the rolls for 25 – 30 minutes or until golden.

Remove from the oven. Brush the tops of rolls with butter. Let the rolls cool in the pans for 10 minutes. Remove rolls and place on wire rack. These rolls can be served warm or at room temperature.

If needed you can make these a day ahead, so you can concentrate on all the other dinner items.

Add 1/4 of each green, red and yellow peppers 🫑 cut up into your choice of size and 1 onion. If your making this for kid’s you may want to dice the peppers and onion’s into very small pieces. I like 1” inch piece’s for adults. You can also purée in the blender for a smoother texture.

While the meat 🥩 is cooking cut up your veggies 🥗 and onions 🧅 .. Cook your meat 🥩 down and drain the grease.

Add your onion 🧅 and 🫑 peppers. Add 1 teaspoon salt.

Add 2 Teaspoons of garlic. I use 2 of the frozen 5 gram cubes. ( 1 Teaspoon each cube ). Continue cooking

Cook down until soft and onion’s are translucent.

  • 1 pound Hamburger
  • 1 teaspoon Salt
  • 1 tablespoon White Sugar
  • 1 teaspoon Celery Salt
  • 1/2 cup Brown Sugar
  • 1 tablepoon All Spice
  • 1 can Tomato Paste 6 oz
  • 1 1/2 cups Water

Adding water 1/2 cup at a time. Mix it up until all the water is gone.

Simmer for 45 minutes

You can adjust the serving size by increasing all the ingredients. This makes approximately 6 to 8 sandwiches.

Yummy ready to go

I toasted some fresh baked garlic pepper Jack cheese bread. It paired wonderfully. So buns for the kids and add cheese or a different bread for the adults.

Here are a few steps you can take to get started.

#1 You’ll need seeds

Before you start let’s get everything you’ll need to set up for success.

  • Seeds (There are several to choose from)
  • Containers ( seedlings can be planted in sprouting cubes or directly into big pots 5 gallon size).
  • Soil ( should be light fluffy non fertilized).
  • Lights ( depending on how many plants, lighting can be as simple as a regular light bulb for the seedlings to Full Spectrum lighting for growth of vegetation and flowering)
  • pH Tester ( very important pH balance of the water should be between: First weeks: 5.8 – 5.9. Pre-bloom: 6.0 – 6.2. Real bloom: 6.0 – 6.3
  • Water ( test your water. You can use bottled spring water with no additives.)

Starting your seeds. You’ll need 1 paper towel and a plastic bag or a plate. Good water is necessary for a healthy start.

Place the paper towel in the bowl, plate or plastic bag. Place your seed or seeds in the center. If more than one seed make sure to give plenty of space between the seeds. Gently pour the water over the paper towel and place in a dark place. Check every day. Should only take a couple of days till a little white root appears. Wait until it’s about 1/2 inch long.

Cover it up and water

After the seed germinates wait until it is 1/2” long. Make a hole about 1 inch deep. A pencil eraser is a measuring tool. Place the root down and the seed cap. Lightly place some fluffy dirt on top and water. Set under the lights about 1” inch above seedling. Don’t turn on the lights until the 2 green leaves appear. Then 18 to 20 hours of light per day.

“Did you know” Lard, Manteca or Tallow is actually healthy for you. That’s right.

Up until 1990 when the vegan movement took place those tasty McD’s french fries were fried in tallow. Tallow is a rendered form of beef or mutton fat, primarily made up of triglycerides. It is solid at room temperature. Lard / Manteca is rendered from pork.

Lard / Tallow has always been an important cooking and baking staple in cultures where pork / beef is an important dietary item, with pig / cow fat often being as valuable a product as the meat.
Lard is a semi-solid white fat product obtained by rendering the fatty tissue of the pig. It is distinguished from tallow, a similar product derived from fat of cattle or sheep.

Tallow and Lard can be rendered by steaming, boiling, or dry heat. The culinary qualities of lard vary somewhat depending on the origin and processing method; if properly rendered, it may be nearly odorless and tasteless. It has a high saturated fatty acid content and no trans fat. At retail, refined lard is usually sold as paper-wrapped blocks.

Many cuisines use lard as a cooking fat or shortening, or as a spread in the same ways as butter. It is an ingredient in various savory dishes such as sausages, pâtés, and fillings. As a replacement for butter, it provides flakiness to pastry. In western cuisine, it has ceded its popularity to vegetable oils, but many cooks and bakers still favor it over other fats for certain uses.

Tallow / Manteca Tortillas

  • 2/3 cup Lard, Manteca or Tallow, room temperature
  • 2 cups all-purpose Flour
  • 1 tsp kosher salt
  • 1/2 tsp baking powder
  • 1/3 c water, warm added sparsely

Working with a mixer or by hand with a whisk and spoon, whip the tallow until very creamy. Start adding dry ingredients and mix at low speed until the dough takes on a sandy appearance. Slowly add the warm water with the mixer running, and continue to mix until the dough comes together into a smooth ball. If using spoon make sure to mix well

Wrap the bowl tightly in plastic, and allow to rest at room temperature for 30 minutes.

Heat a heavy cast iron or non-stick skillet over low heat. Divide the dough into 10 portions, rolling each into a smooth ball. Working on a lightly floured surface. Using a rolling pin, press each portion to an approximately 4″ circle. Cook on each side for approximately 4 to 5 minutes, or until toasted to a medium golden tone.

You can keep them warm in a tortilla warmer or a clean kitchen towel.

If a less flaky tortilla is desired, add more water to the dough, approximately one or two tablespoons, or enough to make the dough just barely stick to a clean finger. The remainder of the recipe would be worked the same.

Dark chocolate has an extra layer of goodness. You ask what could be good about chocolate candy, besides that it’s yummy. I’m about to tell you all about the great powers of chocolate.

Feeling a little sluggish? Try having 25g of dark chocolate 72%. Dark chocolate contains just enough caffeine for a little afternoon burst of energy.

Caffeine is a compound naturally found in commonly consumed items such as coffee, tea, and chocolate. An average cup of coffee (8 fl oz) contains about 95 mg and the same amount of tea contains about 26 mg. Compared to these two sources chocolate has very little caffeine. The caffeine content of chocolate is dependent on the amount of cacao in the product. Dark chocolate contains about 20 mg of caffeine per ounce, milk chocolate contains about 6 mg per ounce, and white chocolate contains no caffeine. However, caffeine content will vary and can be dependent on the cocoa bean type and origin.
