Well I wanted to see if storing fruit in mason jars really worked. It does and better than I thought.

Started on Monday March 6th today is the 11th. Almost 6 days and the mason jar of bananas are still green. Just starting to ripen.

Do not do bananas. They look green and you take them out within an hour they start to sweat and turn black. Within 4 hours total glossed over black.

Im also trying the strawberries. 3 weeks ago I bought 16 ounce strawberries. Left them in the refrigerator for about a week or so. They were a little wilted and so I put them in the jar and it actually revived them for another week.

If your going to use store bought applesauce please read the ingredients. The are 3 ingredients in this brand. Apples, water and ascorbic acid. This is perfect. No unknown hard to pronounce words.

Leftovers: Strawberry Short Cake Compote


Take your leftover strawberry compote and turn it into something new.

Homemade Fresh Strawberry Shortcake Compote

You’ll find just how easy it is to make your own strawberry jam without all the extra sugar and junk your body does not need.

Yes trust me when I say less sugar and no preservatives does a body good.

I had some leftover frozen strawberries from this past season. So I added the frozen strawberries to my compote and 1” inch of water above the strawberries and turn on the heat under my pan to high.

Bring to a full boil and reduce the heat to a slow simmer. It’s more about the flavors you are bringing out with the slower simmer.

At this point the house is smelling like a strawberry field at picking time. The sweet undeniable smells of hot summer days come rushing through my senses. I just want to throw open the windows and let the world have a whiff.

Once your strawberries puff up (15 to 20 minutes) you can remove the lid and smash the strawberries with a fork or potato masher. Depending on how chunky you want your jam.

Make sure you continuously stir and watch the pot as they say. Jams are hard to clean up. Plus at this point you shouldn’t be using any heat that is going to make a boil. Simmer is tiny bubbles. Just like you see in champagne.

Continue cooking without the lid on low heat to reduce the fluid. This might take up to an hour.

Still to much fluid. Keep reducing

During this time you need to taste it for sweetness. You can add sugar or vanilla at this time if needed. Depending on how sweet your strawberry short cake compote was.

Once it is semi thick and sticks to your spoon with just a little bit of slide to it. It’s ready, you can turn the heat off and let it rest. It will continue to thicken on its own.

Strawberry jam is sticking to the spoon. Remove from heat.

Believe it or not strawberries have a natural pectin. So it will thicken all by its self.

Strawberry Jam is cooling down

Add the cooled jam to your containers.

I put all my jams in 3 ounce containers with lids and I freeze them. That way I can have fresh strawberry jam or any other flavor anytime I want.

Here are a few steps you can take to get started.

#1 You’ll need seeds

Before you start let’s get everything you’ll need to set up for success.

  • Seeds (There are several to choose from)
  • Containers ( seedlings can be planted in sprouting cubes or directly into big pots 5 gallon size).
  • Soil ( should be light fluffy non fertilized).
  • Lights ( depending on how many plants, lighting can be as simple as a regular light bulb for the seedlings to Full Spectrum lighting for growth of vegetation and flowering)
  • pH Tester ( very important pH balance of the water should be between: First weeks: 5.8 – 5.9. Pre-bloom: 6.0 – 6.2. Real bloom: 6.0 – 6.3
  • Water ( test your water. You can use bottled spring water with no additives.)

Starting your seeds. You’ll need 1 paper towel and a plastic bag or a plate. Good water is necessary for a healthy start.

Place the paper towel in the bowl, plate or plastic bag. Place your seed or seeds in the center. If more than one seed make sure to give plenty of space between the seeds. Gently pour the water over the paper towel and place in a dark place. Check every day. Should only take a couple of days till a little white root appears. Wait until it’s about 1/2 inch long.

Cover it up and water

After the seed germinates wait until it is 1/2” long. Make a hole about 1 inch deep. A pencil eraser is a measuring tool. Place the root down and the seed cap. Lightly place some fluffy dirt on top and water. Set under the lights about 1” inch above seedling. Don’t turn on the lights until the 2 green leaves appear. Then 18 to 20 hours of light per day.

Multi-Use Strawberry Jam


Now here’s a recipe with multiple uses. This can be used for jam on your toast, ice cream and cake poté filling.

I only make small batches. One pound of strawberries and half the sugar of other recipe’s. Big chunks of strawberries simmered to perfection. Low in sugar. No pectin.

Strawberry Shortcake

INGREDIENTS

  • 1 pound Strawberry
  • 1/2 cup Sugar
  • 1/2 Teaspoon Vanilla
  • 2 Tablespoon Lemon Juice
  • Water to cover berries by 1”inch

DIRECTIONS

  • Take the tops off the strawberries and clean under water.
  • Cut strawberries up into chunks.
  • Place the strawberries in a medium sauce pan with the water.
  • Add sugar and lemon juice
  • Turn the fire on to medium and bring to a full boil. Turn the heat down so it simmers.
  • Continue to stir as it thickens.
  • When the jam is thick enough that it sticks to the spoon when turned on side. Remove from fire.
  • Add vanilla and stir really well.
  • Add to mason jar and completely cool. Put it in refrigerator.
  • Jam will thicken as it cools.

Banana Peanut Butter Oatmeal cookies


Just what my doggies ordered. They love these cookies. It’s healthy and nutritious.

Banana, Peanut Butter Oatmeal cookies

INGREDIENTS

2 cups Oatmeal (soaked)

1/2” inch Water cover above oats

1 cup Banana

1/2 cup Peanut butter

2 cups All Purpose Flour

1 Tablespoon Olive oil

DIRECTIONS

Place 2 cups oatmeal in container and cover 1/2 inch water over the top. Leave that set until almost all the water has been absorbed. About 1.5 hour

2 cups Oatmeal
1/2” inch water to cover oatmeal
1/2 “ inch water over oatmeal soaking 1 to 1.5 hours

Heat oven to 350’ degree F. Grease 1” x 15”x 21” cookie sheet with the olive oil

Place the banana, peanut butter and oatmeal.

Stir / Cream the ingredients together. Make sure all the bananas are mixed in good. You might want to mix the bananas prior to adding to the mix.

After getting those ingredients mixed time to add the flour.

Place the dough onto the cookie sheet and smooth out to thin layer.

Place in oven on center rack for 30 minutes. take out of oven. The sides should be pulled away from pan. Get the pizza cutter and cut your squares. Turn oven off and put the pan back into the oven and let bake until cool. You can make the size of the cookie fit your dog. I have 4 dogs in various sizes. From 85 to 15 pounds. So my cookies are various sizes.

After 30 minutes remove from the oven

Cut your squares and put them back into the oven until completely cool.

Remove from oven after completely cool. Put into an airtight container and refrigerator. I have 4 dogs and this last 3 weeks. You can also freeze them and just take out what you need.

Your dogs will love them until the last cookie…

You can adjust this recipe to your dogs taste or yours. I ate one and i couldn’t taste the peanut butter. I did a second recipe with 1 1/2 cups of peanut butter. I can taste the peanut butter and my dogs could really smell their treats baking and waited by the kitchen door.

  • Yield: 2 Pie Crusts
I am using some left over Apple Cinnamon filling from the empanadas that I made for Christmas breakfast. I had made a large batch of Apple Cinnamon Filling and put 2 big tubs in the freezer for later. Enough for 2 deep dish pies. Butter Pastry Crust for Sweet and Savory Pies (2 crusts) Ingredients 2 1/2 cups all-purpose flour, plus extra for rolling
  • 1 cup (2 sticks or 8 ounces) unsalted butter, very-cold, cut into 1/2 inch cubes
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 6 to 8 tablespoons ice water

Bragg Favorite Health Smoothie “Pep” Drink

In summer you can add fresh organic fruit in season: peaches, papaya, blueberries, strawberries, all berries, apricots, etc. instead of bananas. In winter, add apples, kiwi fruit, oranges, tangelos, persimmons, pears, etc. If necessary try sugar-free, frozen organic fruits. Serves 1 to 2

Ingredients:
1 medium ripe banana
1 cup shredded carrots (see note below)
1/4 cup applesauce, unsweetened or a fresh apple pureed
1/8 cup water (you may need to add additional 1/8 cup water)
1 1/2 cups whole wheat flour
1 cup rolled oats

Instructions:
Preheat oven to 350° F
Lightly spray a baking sheet with non-stick spray.
Mash the ripe banana in a small bowl. Grate the carrots, and mix with the banana. Then pour in the applesauce and water. In a medium bowl, whisk together the flour and oats. Make a well in the center of the dry ingredients and pour in the carrot mixture. Stir until thoroughly combined. Roll into marble size balls, flatten with fork to 1/2 inch thickness. Place on the baking sheet and bake for 25 minutes. Let them cool overnight in the oven.

To strengthen your body’s ability to fight cancer, you need to eat what I ate:
The biggest baddest healthiest salad on the planet!
It consists of raw organic vegetables, sprouts, seeds, nuts and homemade dressing.
This salad is super healthy, delicious and will fill you up without zapping your energy.

The Raw Vegan Diet was a huge part of my anti-cancer strategy and I ate this salad every day, sometimes twice a day, during the first few years of my Chemo-Free Cancer Battle.

I wanted to put as many vitamins, minerals, nutrients and enzymes into my body as possible and there’s no better way than Juicing and eating fresh raw organic fruits and vegetables.

There’s really no secret formula to this salad, but there are some guidelines to follow:

Absolutely no cheese, meat, or store-bought salad dressing.

It’s also a good idea to avoid fruit which can cause some indention when eaten with vegetables.

It is important that you use organic produce, which is free of toxic chemical fertilizers and pesticides.
And of course wash everything before you eat it. Then just chop it all up and throw it in a bowl!

Note: You’re might need some bigger bowls.  Mine doesn’t look very big in the photo, but it holds over 6 cups. That’s six servings of vegetables! 6-10 servings per day of fruits and vegetables is ideal for cancer prevention and healing.

The Giant Cancer Fighting Salad
-Start with the most nutrient dense dark leafy greens: Kale and Spinach. (Do not exceed 10 cups per day)
-Broccoli (The best source of sulforaphane which promotes liver detoxification, and Indole-3-carbinol, an anticarcinogenic compound )
-Broccoli Sprouts (Concentrated sulforaphane & I3C. Do not exceed four cups of sprouts per day)
-Cauliflower
-Purple cabbage (cheapest source of antioxidants per ounce in the world!)
-Slice of red onion, (yellow or green onions may actually be better)
-Leeks
-Artichokes
-Red, Yellow, or Green Peppers
-Mushrooms Bella, Cremini, Shiitake, etc.
-1/2 an Avocado
-Squash
-Zucchini
-Raw Sunflower seeds (sprouted is better)
-Raw Almonds (sprouted is better)
-Sprouted Garbanzo Beans
-Sprouted Mung Beans
-Sprouted Red or Green Lentils

Then I top it off with either one of these naturally fermented foods:

-Kimchi (Pronounced “Kim Chee”)

Fermented foods are great for digestion and repopulate your intestinal flora with beneficial bacteria essential for health.

Repeat: Absolutely no cheese, meat, fruit, or store-bought salad dressing.

I know it seems weird to exclude fruit.  Here’s why:

Fruits and vegetables need different digestive juices, and when eaten together can create excess acid and indigestion. That is why it’s a good idea to eat them separately, especially if you are sick.  This even includes non-sweet fruits like tomatoes and cucumbers.

My Homemade “Zesty Italian” Salad Dressing
This is hands down the healthiest salad dressing on the planet!
It’s super easy and delicious.  Here’s how you make it:
-Add 1 tbsp Bragg organic extra virgin olive oil to your salad
-Add 1 tbsp Barleans cold-pressed flax oil to your salad
-Lightly drizzle Bragg Organic Apple Cider Vinegar to taste (another super healthy fermented food!)

Then shake on as much of these Four Cancer Fighting Spices as you can stand:
-Organic Oregano
-Organic Garlic Powder
-Organic Turmeric or Curry Powder
-Organic Cayenne Pepper (this will spice it up quick, go easy the first time)

I can’t tell you many times I have eaten this salad!   Over a thousand I bet.
And what’s funny is I have several books filled with of raw vegan recipes, but the Giant Salad ended up being my staple meal.

Most days I ate it for lunch and dinner. I didn’t mind eating the same thing every day because it was simple and quick to prepare.  I didn’t have to put any time into planning my meals. I knew exactly what to buy at the grocery store every week, and it’s so delicious and full of flavor it never got old!

One final note: The salad really doesn’t have to be “giant”, I make big ones because that’s what it takes to fill me up. Not everyone needs to eat that much. A small version is fine too. Just focus on getting as many nutrient dense vegetables in there as you can and make it big enough to satisfy your appetite.

Ingredients:

  • 1 4-oz can of tuna in water
  •  1/4 cup tuna water
  •  1 egg
  • 1/4 cup cornmeal
  •  1/2 cup whole wheat or spelt flour

 

Instructions:

Pre-Heat Oven to 350’F

  • Lightly grease pan
  • Shred tuna fine, add egg and mix well. Add tuna water and mix well. Add cornmeal and mix till. If balls are not forming, add a small amount of water to get the balls to stick together if not sticking.
  • Spoon out ½ Teaspoon roll into a ball, Place pieces on greased baking sheet smash with fork to 1/4-inch thick
  • Bake at 350’F oven for 15-20 minutes or until light brown
  • Cool to room temperature, place in an air-tight container, and store in the refrigerator or the freezer. They will keep well in the fridge for up to 1 week and in the freezer for up to 3 months. Serve at room temperature.

The uses for diatomaceous earth are many but in the garden diatomaceous earth can be used as an insecticide.

Diatomaceous earth works to get rid of insects such as:

  •     Adult Flea Beetles
  •     Cockroaches
  •     Snails
  •     Slugs

To the insects, the diatomaceous earth is a lethal dust with microscopic sharp edges that cut through the insect’s protective covering, causing them to dry out, thus killing them when they are either dusted with the diatomaceous earth or applied in a wet spray form.

One of the benefits of diatomaceous earth for insect control is that the insects it helps to control have no way to build up a resistance to the diatomaceous earth, like with many of the chemical control insecticides

How to Apply Diatomaceous Earth In The Garden: Most places where you can purchase diatomaceous earth will have complete directions on the proper application of the product. As with any pesticide, be sure to read the label thoroughly and follow the directions thereon! The directions will include how to properly apply the diatomaceous earth (DE) both in the garden and indoors for the control of many insects as well as forming a barrier of sorts against them.

In the garden diatomaceous earth may be applied as a dust with a dust applicator approved for such use; again it is of the utmost importance to wear a dust mask during application of the diatomaceous earth in this manner and leave the mask on until you have left the dusting area. Keep pets and children clear of the dusting area until the dust has settled.

In my opinion, it is better to apply the product in a wettable form to avoid the airborne dust particles problem, even then wearing a dust mask is a garden smart action to take. When using as a dust application, you will want to cover both the top and underside of all foliage with the dust. If it rains right after the dust application, it will need to be reapplied. A great time to do the dust application is right after a light rain or in the very early morning when the dew is upon the foliage as it helps the dust to stick well to the foliage.

Please make sure you do not apply where bees will be. It will kill them.

For doing the spray application of diatomaceous earth, the mix ratio is usually one (1) cup of diatomaceous earth per ½ gallon or two (2) cups per gallon of water. Keep the mix tank agitated or stir it often to keep the diatomaceous earth powder well mixed with the water. This mix may also be applied as a paint of sorts to trees and some shrubs.

This is truly an amazing product of nature for use in our gardens and around our homes. Don’t forget that it is the “Food Grade” of diatomaceous earth that we want for our gardens and home use.

A mixture of borax, sugar and flour kills both roaches and ants. The flour and sugar attract the insects, and the borax kills them. Cocoa powder is an effective substitute for the sugar.

Borax mixtures are also effective against silverfish. The boric acid content in borax damages the insects’ outer skeletons, causing them to dehydrate. More expensive commercial insecticides also use boric acid. Water lowers borax’s effectiveness, making it only suitable for dry locations.

While borax is less toxic than other insecticides, it is still mildly toxic. Users must ensure that children and pets do not have access to borax-based insect bait.

 What are home remedies for fire ant bites?

  • Washing the area, applying a cold compress, and using medications, such as topical corticosteroids or antihistamines, are all home remedies for fire ant bites, according to HowStuffWorks. Individuals should also refrain from scratching the bites as scratching can make the bites worse. Getting the ants off of the skin is the first step in treating fire ant bites, claims HowStuffWorks. In this case, a person needs to brush the ants off, as they cling to the skin. Do this with a cloth or rag, not a hand, if possible, as the ants may begin biting the hand, too.
  • Fire Ants in Hawaii are mean. I have found using Diatomaceous Earth paste on the bite works awesome. Sting goes away in a few minutes.
  • It is important to clean the bite area with soap and water, explains HowStuffWorks. Cold compresses, oral antihistamines and topical medications used for bug bites may also be used to treat pain and itching. Individuals should avoid itching the pustules, if possible, as it can lead to infection.
  • Only about 1 percent of all people who are bitten by fire ants experience an allergic reaction, but it is important that those who are bitten know the signs, warns HowStuffWorks. Typical signs of fire ant allergy include chest pain, nausea, excessive sweating, swelling of the tongue or bite site, and slurred speech. Some people also experience difficulties breathing. A fire ant allergy may require emergency medical treatment.

NATURAL ENIMIES OF FIRE ANTS

  • Classical or self-sustaining biological control is the use of imported natural enemies to suppress pests.
  • Self-sustaining biological control can be an effective and environmentally safe method to permanently control pests over wide areas.

 

  • Diatomaceous Earth (DE), Pyrethrum and Piperonyl
    Butoxide (from sassafras) that are proven to kill ants. These safe ingredient
  • Pyrethrum has been used for centuries as an insecticide,[1] and as a lice remedy in the Middle East (Persian powder, also known as “Persian pellitory”). It was sold worldwide under the brand Zacherlin by Austrian industrialist J. Zacherl.[2] It is one of the most commonly used allowed non-synthetic insecticides in certified organic agriculture.[3] The flowers should be dried and then crushed and mixed with water.
  • Pyrethroids are synthetic insecticides based on natural pyrethrum (pyrethrins); one common example is permethrin. A common formulation of pyrethrin is in preparations containing the synthetic chemical piperonyl butoxide: this has the effect of enhancing the toxicity to insects and speeding the effects when compared with pyrethrins used alone. These formulations are known as synergized pyrethrins.
  •  Rat and rabbit LD50 levels for pyrethrum are high (safe), with doses in some cases of about 1% of the animal’s body weight required to cause significant mortality similar to levels in synthetic pyrethroids.[4] Nevertheless, pyrethrum should be handled with the same caution as synthetic insecticides.[5]
  • People can be exposed to pyrethrum as a mixture of cinerin, jasmolin, and pyrethrin in the workplace by breathing it in, getting it in the eyes or on the skin, or swallowing it. The Occupational Safety and Health Administration (OSHA) has set the legal limit (Permissible_exposure_limit) for pyrethrum exposure in the workplace as 5 mg/m3 over an 8-hour workday. The National Institute for Occupational Safety and Health (NIOSH) has set a Recommended_exposure_limit (REL) of 5 mg/m3 over an 8-hour workday. At levels of 5000 mg/m3, pyrethrum is immediately dangerous to life and health. People exposed to pyrethrum may experience symptoms including pruritus (itching), dermatitis, papules, erythema (red skin), rhinorrhea (runny nose), sneezing, and asthma.[6]

Companion planting

Because chrysanthemums contain pyrethrums, they are used as companion plants to repel pest insects from nearby crops and ornamental plants.[7] They are thought to repel aphids, bed bugs (Cimex lectularius), leafhoppers, spider mites, harlequin bugs, ticks, pickleworms, and imported cabbage worms, among others, in gardens and farms. For example, they are planted among broccoli plants for protection from several common insect pests.

We have been programmed into staying within our boxes. It’s safe and comfortable and society says it’s “the RIGHT thing to do”. How to Treat Ear Mites In 10 Easy Steps

Ear mites pose an itchy aggravation for puppies and their people. This parasite also can travel outside of the pup’s body, making it very contagious to other pets in the home. If one pet has ear mites, all of the other dogs, cats, rabbits and ferret friends also need treatment. Your veterinarian can provide this service after diagnosing the mite, but that can get pricey. It’s also helpful for you to learn how to medicate your puppy.

Here’s how to cut the cost and treat puppy ear mites at home.

Ear Mite Medications

The ears are treated by flushing away the debris and mites using an insecticide similar to that used in flea treatments. The medication is often suspended in a bland medium, like mineral oil, which when squirted into the ear helps suffocate the bugs not killed outright by the insecticide.

The solution also floats debris out of the ear canal as the ear base is gently massaged. A number of commercial products are available for treating ear mites; ask your veterinarian for a recommendation.

Home Made Medications

Holistic veterinarians agree that commercial products work well. But puppies sick with ear mites may have other common health challenges that need treatment. It may be less stressful to shoo away the bugs with more natural treatments. Cleaning the ears with soothing solutions is the first step.

  • Antiseptic Tea Rinse. Green tea is a natural antiseptic. It can be used to flush out all the ear might debris—that crumbly brown/black stuff that clogs the puppy’s ear canal. Steep a tablespoon of green tea leaves in a cup of hot water for three or four minutes, and then strain it. Let it cool to room temperature before using once a day for a month.
  • Oil Treatment. Oil helps sooth sore ears, and also can float debris out. Oil also can suffocate the mites. Holistic vets say it doesn’t really matter what kind of oil you use, although some recommend almond or olive oil. Avoid tea tree oil, though, because it can be toxic for cats and smaller pets like young puppies. For the best benefit, crush a couple garlic cloves in a cup of the oil and let it marinate overnight. Garlic naturally kills bacteria that might develop secondary to the mite infection. Remember to remove the garlic before using the oil to treat your puppy’s ears though. You’ll need to treat the ears with the oil/garlic solution daily for at least a month.
  • Apple Cider Vinegar. Add 1 teaspoon to a 8 ounces, put in spray bottle and spray twice a day for 10 days.

The High Dose Oral Vitamin C Protocol for Cancer (and Nearly Every Other Ailment)

I’m really excited about this post because I’m sharing some really cool stuff about Vitamin C that many people do not know. Or maybe I’m wrong and everyone already knows this but me… We’ll see.

This is a powerful anti-cancer protocol and even if you don’t have cancer, you can use this method to determine how much toxic stress is going on inside your body and how high doses of Vitamin C could dramatically improve your health.

Ok so we all now that Vitamin C (asorbic acid) is good for you right? The body doesn’t produce it, so it has to come from food.

You’ve probably also heard that a severe Vitamin C deficiency leads to scurvy. Early symptoms of scurvy are malaise and lethargy. That’s basically a “general feeling of being unwell” along with tiredness or exhaustion. (Does this sound like you?) After a few months comes shortness of breath and bone pain. Further down the road is muscle pain, skin sores, gum disease, loose teeth, wounds not healing, dry mouth, dry eyes, and emotional problems. In the late stages comes jaundice, edema, fever, convulsions, and eventually death.

Sounds fun right? Fortunately scurvy can be CURED with lemons, limes, oranges, and any other Vitamin C containing food.

Here’s where it gets interesting…

The cure for scurvy was first published in 1617 in The Surgeon’s Mate by English military surgeon John Woodall. And it was completely ignored by the medical community.

In 1753 (136 years later) naval surgeon James Lind published his discovery in, A Treatise of The Scurvy, which was also ignored. The medical establishment insisted that the testimonials of eating citrus fruit to reverse scurvy were merely “anecdotal” and not based on “scientific evidence”.  Sound familiar?

Fortunately James Lind persevered and about 50 years later citrus fruit was finally accepted and used for the prevention and treatment of scurvy on sailing vessels. So, in summary:

The cure for scurvy was ignored for nearly 200 years after its discovery.

Nutrition and natural therapies are still ignored modern medicine. In fact I’d be willing to bet that if you went to see a doctor with some of the symptoms of scurvy that I listed above, you be subjected to a barrage of expensive tests, misdiagnosed, prescribed pharmaceutical drugs, and subjected to treatments for some other disease. This happens all the time. Earlier this year my good friend Tony was told that he probably had cancer or AIDS, turns out it was viral pneumonia. Can you imagine?

But I digress… Let’s get back to Vitamin C.

Here are some common whole food sources of Vitamin C:

Oranges, Kiwi, Canteloupe, Papaya, Strawberries, Brussels Sprouts, Broccoli, Cauliflower, Cabbage, Kale and Peppers.

“Super foods” with the highest concentration of Vitamin C on planet earth are:

Camu Camu Fruit, Amla (Indian Gooseberry), and Acerola Cherries. In that order.

Vitamin C supports nearly every system in your body: your adrenals, your immune system, your cardiovascular system, and more. Perhaps the most important is that it is a neutralizer of free radicals.

There’s been tons of ground-breaking research on high-dose Vitamin C’s powerful healing and anti-cancer effects by the likes of Fred Klenner MD, Irwin Stone, Linus Pauling, and Ewan Cameron. I don’t have time to get into their stories but I wanted to a least give credit where it’s due. Google them in your spare time. There’s a fascinating Vitamin C phenomenon that most of us don’t know about.

The sicker and/or more toxic you are, the more free radicals you have in your body, and as a result, the more Vitamin C your body will absorb and use. The body keeps a small reserve of Vitamin C available for use when there is increased internal demand, but when you are sick this is quickly depleted.

You may have also heard (or experienced) that if you take too much Vitamin C by mouth you get the runs, aka “chach” which is our family’s abbreviation (and code word) for

“Diarrhea Cha Cha Cha”.

A healthy person can take anywhere from 4-15 grams (4,000-15,000 mg) of Vitamin C in a 24 hour period without getting the runs, but a sick person can tolerate anywhere from 10-20 times more. I’m talking even as much as 100-200 grams per day by mouth.

Have you ever taken Vitamin C when you had a cold and it didn’t help? This is probably because you didn’t take near enough.

Here’s where it gets ridiculous… If you ate something that contained “100% of the USRDA (Recommended Daily Allowance ) of Vitamin C” that seems pretty good right?

It’s not.

The USRDA for Vitamin C is only 75 mg. That’s MILLIGRAMS. A normal healthy person can absorb and use between 4,000-15,000 milligrams per day. So the USRDA is way off on this one. 75 mg is basically what someone decided is the absolute minimum amount to keep you from getting scurvy. This is not an amount that promotes health and optimal body function.

One orange has about 150mg of Vitamin C, about 2 times more than the USRDA. And 1 teaspoon of Camu Camu Powder has about 15 times the USRDA of Vitamin C!

Even though you may not have scurvy, I think it’s safe to assume that many of us may not be getting enough Vitamin C in our diets, the lack of which could be a contributor to

  1. a) feeling lousy or b) serious disease.

High Dose Oral Vitamin C Therapy is taking the maximum dose your body can tolerate before you get the runs. This requires finding your threshold and then backing off a little bit for your daily dose. The clinical term is “titrating to bowel tolerance”.

As some of you know, one of the therapies I used to help my body heal from cancer was Vitamin C IV Therapy, which is a common practice in the natural/alternative cancer treatment world. This involves sitting in chair in a practitioner’s office for two hours with an IV drip containing 50 grams or more of Vitamin C. And while this is a very effective method to get a massive dose of Vitamin C without reaching bowel tolerance and to promote healing in the body, it is time consuming and expensive. I was paying $120 a pop, cash money. And in order for it to be the most effective you need to do it 2-3 times per week for many weeks.

My friend Bill, who’s healing his prostate cancer naturally, turned me on to a simple do-it-yourself Oral Vitamin C Protocol that he was put on by an underground cancer treatment expert whose name I cannot use publicly. Bill initially reached bowel tolerance taking 60 grams per day. After two months his tolerance was down to less than 30 grams per day. That’s a very good sign.

The Vitamin C Toxicity Test & Protocol

This is something everyone should do. Now clearly no one wants diarrhea on purpose, but in this case it can give you some immediate feedback about your internal condition. And it’s super cheap to do!

The simple way to find your tolerance is to take 2-3 grams of Vitamin C powder or crystals (ascorbic acid) every two hours mixed in 8 oz of water. That will give you about 12-18 grams the first day. Make sure you keep track of your doses. Vitamin C powder is highly concentrated. 1 teaspoon is usually about 5 grams of Vitamin C.

The goal is to find your 24 hour limit, not your single dose limit.

The half-life of Vitamin C in the body is about 30 minutes. That means about an hour after you take Vitamin C, your body has used up most of it. So an important key to this protocol is to keep your body saturated with C all day. Dosing every 1-2 hours is ideal.

If you reach bowel tolerance in the first 24 hours, reduce the total dose by 20-25% and continue to take that amount every day  as a maintenance dose (this may be for several days or weeks) until you reach bowel tolerance again at that level. Then reduce by 20% again and continue with that dose until you hit bowel tolerance, and so on.

It works the opposite of what you would expect because you don’t build up a tolerance. The healthier you become, the lower your bowel tolerance for Vitamin C will go.

If you reach bowel tolerance at 10-15 grams or less per day, you’re considered to be in very good shape health wise.

If you follow the steps above and do not reach bowel tolerance the first day, continue to up the dose each day until you get there. If you are seriously sick you may need to dose every hour or 1/2 hour as indicated in the chart below. As you get close to bowel tolerance you will get gassy and should have soft stool. That means you’re very close to your body’s limit and should reduce your dosage a bit.

Something else worth noting in the above chart: If you are under chronic stress or engage in athletic activities like running, weight training, etc. you are likely to have an increased need for Vitamin C and your tolerance will be higher. Even if you are healthy.

Dr. Cathcart also notes that low dose vitamin c had basically no effect, but high dose vitamin c, when taken at 80-90% of bowel tolerance, produced a significant and dramatic reduction of symptoms in his patients.

Experiments

When I first tried this protocol a couple months ago I didn’t reach bowel tolerance until I got to around 34 grams. I worked my way up to taking 12 grams three times per day. I have no idea why my tolerance was that high. I workout 3-5 days per week which would increase my tolerance but perhaps I also had something going on internally… who knows?

Earlier this morning I took 7.5 grams and it produced bowel tolerance for me a couple hours later which actually interrupted my work on this post. Clearly my tolerance is down and if Dr. Cathcart is right, my internal health has improved.

Another one: My kids came home with colds from school two weeks ago. Then my wife got it. One morning I started to feel cold symptoms as well so I took 10 grams of Vitamin c. I felt great all day. Then close to bedtime I started to feel the symptoms again so I took another 10 grams. I did this every day for about a week. I would feel the symptoms in the morning, but I quickly crushed them with 10 grams of vitamin c.  Some days I would take a dose around lunch time as well if I remembered. I was taking 20-30 grams per day for most of the week, I felt good, I was close to bowel tolerance, and the cold never developed. Since then, I’ve done this more times than I can count. Works every time.

What form to take?

Vitamin C comes in several different forms: pure asorbic acid and buffered with minerals.

Buffered C contains mineral salts like calcium asorbate, magnesium asorbate, and sodium asorbate. Buffered C is more alkaline but the excess minerals could be problematic if you are taking mega doses.

I compared three different types (buffered and pure asorbic acid) to see if they had different effects but my tolerance was basically the same for all three. Having said that…

Solaray Vitamin C Powder is 100% pure asorbic acid so it’s extremely tart and citric. Vitamin Shoppe Buffered C-Complex tastes chalky, not citric.

Thompson C Buffered Crystals is buffered with calcium asorbate, it’s citric but not as strong as the pure crystals.

Dr. Cathcart recommends taking pure asorbic acid for the high dose oral protocol. Dr. Thomas Levy recommends sodium asorbate. I think it makes sense to rotate between different types.

*After writing this post it was brought to my attention that most of the asorbic acid in vitamin C powder is made in China from GMO corn. If that is a concern for you, there are several brands of non-GMO vitamin C powders.

Testing can help your doctor find out whether your child’s problem is related to Asperger’s syndrome. Your primary care provider may refer your child to a specialist for testing, including:

  • Psychological assessment. Intellectual function and learning style are evaluated. IQ (intelligence quotient) and motor skills tests are common. Personality assessment tests may also be done.
  • Communication assessment. Speech and formal language are evaluated. Children are tested to find out how well they understand and use language to communicate ideas. Your doctor will also test for understanding of nonverbal forms of communication and nonliteral language skills, such as understanding of humor or metaphor. He or she will listen to your child’s voice for volume, stress, and pitch.
  • Psychiatric examination. Your doctor may examine your child’s family and peer relationships, reactions to new situations, and the ability to understand the feelings of others and types of indirect communication such as teasing and sarcasm. Your doctor may want to observe your child at home and at school. He or she may also look for conditions such as anxiety and depression, which are often found in people with Asperger’s syndrome.

  • Encourage your child to learn how to interact with people and what to do when spoken to, and explain why it is important. Give lots of praise, especially when he or she uses a social skill without prompting.
  • Practice activities, such as games or question-and-answer sessions, that call for taking turns or putting yourself in the other person’s place.
  • Help your child understand others’ feelings by role-playing and watching and discussing human behaviors seen in movies or on television. Provide a model for your child by telling him or her about your own feelings and reactions to those feelings.
  • Teach your child how to read and respond appropriately to social cues. Give him or her “stock” phrases to use in various social situations, such as when being introduced. You can also teach your child how to interact by role-playing.
  • Foster involvement with others, especially if your child tends to be a loner.
  • Teach your child about public and private places, so that he or she learns what is appropriate in both circumstances. For example, hugging may not be appropriate at school but is usually fine at home.

Strategies for school:

  • Use visual systems, such as calendars, checklists, and notes, to help define and organize schoolwork.
  • Orient your child to the school setting. Before the school year starts, take time to “walk through” your child’s daily schedule. You can also use pictures to make your child familiar with the new settings before school starts.
  • Be aware of and try to protect your child from bullying and teasing. Talk to your child’s teacher or school counselor about educating classmates about Asperger’s syndrome.
  • Ask your child’s teacher to seat your child next to classmates who are sensitive to your child’s special needs. These classmates might also serve as “buddies” during recess, at lunch, and at other times.
  • Encourage your child’s teacher to include your child in classroom activities that emphasize his or her best academic skills, such as reading, vocabulary, and art.
  • Set up homework routines for your child by doing homework at a specific time and place every day. This will help your child learn about time management.
  • Use rewards to motivate your child. Allow him or her to watch TV or play a favorite video game or give points toward a “special interest” gift when he or she performs well.
  • Some children with Asperger’s have poor handwriting. Typing schoolwork on a computer may be one way to make homework easier. Using computers can also help children improve fine motor skills and organize information. Occupational therapy may also be helpful.

Once Upon A Midnight Cowgirl

Well we have exciting news at our place.

A mother Pig lost her baby and it wandered onto my land and survived the dog pack. Amazing she must belong on this aina..

I let the dogs out for one last run at 11:15pm. About 20 minutes into this moment of peace and quiet came barking and squealing. I really didn’t know why my dogs were barking so crazy wild. They really don’t bark unless there is something present.

In my pajamas, which consists of boxer shorts and a tank top, I threw on my rubber barn boots and headed out to the dogs. I wrangled up the dogs one by one. I still didn’t see anything until I got the last dog in. That’s when I spotted the tiny 16 ounce water bottled sized black piglet.

So back out I go again to now get the pig before a dog gets a hold of it. Now it’s about Midnight and I finally have chased down the little buckaroo. It was the highest pitch squeal I have ever heard. All the way up to the house. Dogs are howling at the tops of their lungs. Neighbors are turning on their porch lights.

I am pretty sure the mother and her piglets were disturbed by my dogs. I could hear all the dogs on the block howling one by one as the mother headed out of dodge…

I am just thinking “What has god given me now. I am running around trying to find something to put this little piggy in. Laughing the whole time. I spot the dog’s food container I just washed still on the front porch… Put midnight in there so I could collect my thoughts. Then it was like I just put the piglet in front of a microphone with the speaker on high… Oh my…

Ran around to the back and got the dog carrier and some old clothes and stuffed them inside. Put the piggy inside and locked her in my office. Another moment to catch my breath and figure out what my next move is.

I decided to give Midnight some warm milk to sooth her cries… She was a sleep in seconds after that.

April 5, 2017

The next morning starts the journey of caring for Midnight Cowgirl.

I know nothing about farm animals. But thank technology for the internet. I found information on pot belly pigs, but not on raising a Feral Pig. But still found wonderful advice on the  feeding regiment. Good thing a friend of a friend raises pigs also. Her advice was to get Colostrum Supplement and Uni-Milk by Manna Pro.

I built her a “Crib” 72” long x 23” wide. She comes out to eat and do her bathroom duties and back in the carrier for a nap inside my office, which has become her residence. It’s the only place that will stay warm all day and night. Since there is no mom to keep her warm she must stay warm. 90 Degrees to be exact is the optimal temperature for her..

5 dogs, 6 chickens and now a baby pig.

So here we are today April 8, 2017 and Midnight Cowgirl is thriving.

I am exhausted from the hour to 2 hour feedings. But she sleeps through the night which is awesome. Too bad I can’t get my dogs to do that.

She is becoming very playful and needs a yard to run around in and a friend. Gave Midnight a big ball to play with. Big for her we’ll say!!!

Fed her some ground up oatmeal and apple with her Colostrum Supplement (by Manna Pro) today.

She seems to have dandruff. I put a little Diatomaceous Earth on her to get rid of the fleas and ticks or lice. What ever it may be I wanted it dead. She is still to small to give her DE in her food. DE is Great for keeping any un-wanted pests from her inside and outside.

In my opinion, it is better to apply the product in a wettable form to avoid the airborne dust particles problem, even then wearing a dust mask is a garden smart action to take. When using as a dust application, you will want to cover both the top and underside of all foliage with the dust. If it rains right after the dust application, it will need to be reapplied. A great time to do the dust application is right after a light rain or in the very early morning when the dew is upon the foliage as it helps the dust to stick well to the foliage.

de-2For doing the spray application of diatomaceous earth, the mix ratio is usually one (1) cup of diatomaceous earth per ½ gallon or two (2) cups per gallon of water. Keep the mix tank agitated or stir it often to keep the diatomaceous earth powder well mixed with the water. This mix may also be applied as a paint of sorts to trees and some shrubs.

1/3 cup Organic Raw Almond Butter
1 1/4 cups Hot Water
Preheat Oven 350’F
Mix Dry ingredients together, Mix the almond butter and hot water. If it’s too sticky just add a little flour. Mix well. Roll dough into small balls.
On greased cookie sheet place the balls and place fork marks across top. Bake for 40 minutes turn off oven and leave in there overnight. (Healthier than peanut butter)

Doggie Treats

Ingredients:
1 medium ripe banana
1 cup shredded carrots (see note below)
1/4 cup applesauce, unsweetened or a fresh apple pureed
1/8 cup water (you may need to add additional 1/8 cup water)
1 1/2 cups whole wheat flour
1 cup rolled oats

Instructions:
Preheat oven to 350° F
Lightly spray a baking sheet with non-stick spray.
Mash the ripe banana in a small bowl. Grate the carrots, and mix with the banana. Then pour in the applesauce and water. In a medium bowl, whisk together the flour and oats. Make a well in the center of the dry ingredients and pour in the carrot mixture. Stir until thoroughly combined. Roll into marble size balls, flatten with fork to 1/2 inch thickness. Place on the baking sheet and bake for 25 minutes. Let them cool overnight in the oven for crispy treats.

Well that could be a long list or a very short one. The bigger BOXED coffee shops as Star$$$$’s really does not appeal to me. Boring, run of the mill. It’s the smaller shops that actually make a good cup of coffee, or maybe it’s the atmosphere that makes it taste so good. Either way the atmosphere is comfy and inviting. Big oversized chairs to relax in and read a book or chat with others while you sip that wonderful drink.. Sounds like home.

Speaking of terminology.. Lord give me a break. If one more establishment comes up with another tongue twisting drink that takes 5 minutes to order and another 20 minutes to make, I will have to stop altogether. What ever happen to the good Old days when a cup of Joe was just that a cup of joe?

Well we are about to find out… When espresso came to America and where did espresso come from originally? Italy you say…  NO.

Espresso first appeared in Italy in the early 20th century. Coffee had already become a necessity to Italian daily life thanks to North African Muslims who brought it through Venice’s ports during the Renaissance. We owe much of the mystique coffee to Venetian merchants who charged wealthy patrons hefty sums to try out this newfangled drink when the first coffeehouses opened in the 1640’s.

Fast forward about 200 years and we find business man Luigi Bezzera tinkering away with this coffee pot to find a way to make coffee faster. In 1903, Bezzera owned a manufacturing business and was frustrated by the time-consuming process of brewing his own coffee at home each morning.

He soon found that adding steam pressure to the machine not only cut down on the brewing process but also produced a stronger, more robust cup of coffee. This new quick-brew process drew out the coffee bean’s best qualities but somehow avoided over extraction.

Bezzera immediately named his invention the “Fast Coffee Machine”. Since the word ‘espresso’ means fast in Italian, the name of the beverage the machine produced was quickly shortened to what we know today.

Unfortunately, Bezzera wasn’t as talented at marketing and sales as he was at engineering. In 1905, another businessman named Desidero Pavoni purchased the machine’s rights from Bezzera and had it patented.

Nowadays you don’t have to travel to Italy to experience Bezzera’s handiwork. The recent boom in espresso’s popularity has brought this Italian treat to every mall and street corner. Next time you decide to pick one up, take a moment to think about the more than 100 years of history inside your cup.

BREWING…

There are several ways to brew the black magic. Easy, put the water in and walk away to grinding, tampering, brewing and mixing the syrups to get that special taste.

For myself I threw out the Drip coffee maker and opted for the french press carafe. To have a rich full bodied aroma wafting through the house is like a beautiful melody running through your mind over and over.

I still say the best was the Percolator, back in the day. I can remember my grandma making coffee on the stove. Watching the coffee going up into the glass bubble on top and back down again, becoming darker in color each time it reached the bubble. Then the electric percolator my mom used was the highlight of the 60’s. Same technique just plug it in and watch it go.. No more standing by the stove and waiting for that perfect cup of coffee.

The Automatic drip machine came into the light. Wow everyone thought this was the BOMB.. Yes it gave you your pot of coffee in 5 minutes. But where was that rich wafting aroma? Gone with the 5 minute cup.

Then we step up to the home brew station for espresso. Ohh, what magic we have in our possession. Soon every house had an espresso machine big and small.
